These spots apparently so good that people will wait hours upon hours just for a slice of brisket or smoked sausage. So, I'm visiting those spots to see if they're worth the wait.
My first visit, however, ended up being a huge learning lesson.
I thought, where else to start than Texas Monthly's No. 1 barbecue joint, Burnt Bean Co. in Seguin. That wasn't the mistake; in fact, the food we got to try from pitmaster Ernest Cervantes was delicious, definitely deserving of its many accolades. The mistake was putting myself in what ended up being a 3-hour wait for barbecue that nearly broke my sanity. So, if you want to avoid my past errors in hopes of enjoying award-winning barbecue, here are a few tips.
Don't go eat barbecue on Saturdays
Truthfully, I didn't believe the rumors. I knew it could take a while to get my food, but I didn't believe how slowly the line would move. For context, my girlfriend and I (who thankfully did not break up with me when this was all over) got in line at 10:40 a.m. on a Saturday, by which point a line of at least 100 people had wrapped around West Donegan Street. It took us 1 hour and 45 minutes to simply round the corner onto South Austin Street, but we didn't even get through the door until 1:29 p.m. By that point I would've eaten anything to fill my stomach.
The day was a total blunder of mismanagement on my part, but it will not be one I repeat. So, if you have barbecue cravings, do not wait till Saturday to get in line with everyone else. Visit on Thursday if possible, or earlier depending on when the place opens; you'll have to wait at a place as popular as Burnt Bean, but more than likely you won't be waiting three hours.
Get in line three hours early
Let's face it, if you've accepted the hours-long wait for barbecue, you might as well guarantee you'll be one of the first through the door. Better to wait hours before the place opens than sulk outside, shuffling along, afraid they'll run out of meat by the time you get to the counter.
Bring a foldable chair
The irony is I have a foldable chair, brought it in my car, but decided not to use it. Don't be like me. Bring a chair, make sure your partner also has a chair, and prepare to sit in that chair as the line shuffles around the block.
Wear a hat, sunscreen
My girlfriend, very smartly, got to use her parasol for the first time. She never let the sun touch her. But if I weren't two inches shorter than her, I'd have been burnt to a crisp. So, wear a hat and don sunscreen if shade is nowhere to be found.
Bring games, reading material
If you're going to be in line for hours on end, have something on hand to read. Graphic novel, the next ACOTAR book, doesn't matter; just have something to pass the time. If you get tired of reading, bring a tiny game, maybe a pack of cards, to give yourself some mental stimulation after cooking in the sun like the brisket you're about to eat. Fifty games of rock, paper, scissors gets old after a while.
Is Burnt Bean barbecue worth the wait?
I actually won't answer that now. At the end of the year I'll compare all the places I visited to get a sense of which place is worth the hours-long wait.
However, the food was undeniably delicious. The smoked turkey was perfectly moist, some of the best I've had to date. The mac and cheese had a tasty layer of Doritos on top that added a great crunch. The El Tejano brisket taco was incredible, and I actually preferred the leaner brisket in the taco to the fatty slices we ate individually.
The green beans and corn pudding were good counters to the heat of the jalapeño sausage. We sampled the butter-dipped chicken drumstick, but the real star of the show was the sweet potato. The molten dish, combining the flavor of the fluffy sweet potato with the melted marshmallow, ended up being our dessert, perfectly topping off the spread on the day. Without a doubt if the sweet potato is on the menu at Burnt Bean, get it.
So, I'll leave you with a question: Would you wait three hours to eat Texas barbecue?
