Growing up in Beaumont, I got my fill of Southeast Texas-style barbecue at places like Patillo’s and Broussard’s. Occasional visits to the big city — Houston — introduced me to East Texas-style joints like Williams Smokehouse.
There were Austin-style restaurants around, too, such as Otto’s and the County Line, but my first experience with real-deal Central Texas-style barbecue happened circa 1990 on a trip to San Antonio.
A couple of hours into the trip, we veered off Interstate 10 to the small town of Luling, about five minutes north. There, on the main street, was City Market (not associated with Luling City Market in Houston), a barbecue joint like no other I’d ever experienced at the time.
You ordered and paid for your meat in a separate, smoky room filled with glowing barbecue pits. The choices were limited: brisket, pork ribs and sausage, the classic Texas trinity. You then stepped back into the main dining room and selected your sides and condiments at a separate counter, again with the most basic of menus: beans, potato salad, cheese and sauce.
What I didn’t know at the time, but do now, is that City Market is one of the last vestiges of traditional meat market-style barbecue in Texas (Smitty’s in Lockhart being the other). Little has changed here since it opened in 1958, starting with the manager and pitmaster, Joe Capello.
Capello worked here briefly starting in 1962 and, after a stint in the Army, came on full time in 1969. He has been there every day since. The market is owned by Lanny and Randy Ellis, heirs of the original owners.
I’d revisited City Market in the intervening years, mostly on quick-strike barbecue tours through Luling, Lockhart and Taylor. On a recent trip to San Antonio, I veered off the freeway again to check in on this Texas barbecue institution.
Some 30 years after my first visit, very little had changed. Before stepping into the pit room, I scanned the faded menu on the outside window: brisket, pork ribs and sausage. Same as always. Remarkably, the prices had barely changed, with brisket going for $20 per pound, which is about one-third less than most contemporary joints.
More importantly, Joe Capello still manned the pits, pulling off briskets, racks of ribs and rings of sausage and laying them on the round, wooden cutting block behind the order counter where Lanny Ellis sliced the meats to order. Also assisting was Joey Capello, Joe’s son, who started there in 1988.
I asked Joey, 53, when his dad might finally retire and he would take over duties as general manager.
“Every year is the year (he says he will retire),” Joey said, “We’ll see again next January. He actually started taking a whole day off recently.”
I ordered a half-pound each of brisket and ribs and a couple links of sausage. One recent change is that they now take credit cards, so the ATM machine just outside the pit room door is getting less traffic nowadays.
I skipped the side dishes but grabbed a bottle of the barbecue sauce at the condiment counter. This unique mustard-style sauce is based on a recipe made by the wife of one of the original founders and hasn’t changed since they opened.
The brisket here is leaner than at most contemporary craft barbecue joints, reflecting a more traditional cooking method, while the ribs feature a salt-and-pepper-style dry rub. The sausage links are my favorite item, with a beefy/peppery flavor and coarse grind that is the essence of Central Texas barbecue.

For the second time in just three months, the staff and customers of Mr. Taco are mourning another “unimaginable loss” after a Tuesday, Aug. 22, afternoon fire destroyed the flagship Luling restaurant that had been a pillar of the business communities of Caldwell and Gonzales counties for nearly 45 years.
Personnel from Luling Volunteer Fire Department, Ottine Volunteer Fire Department, Mid-County Fire/Rescue, Seguin Fire Department, City of Luling and Caldwell County Emergency Management responded to the blaze, which was reported sometime after 3 p.m. It was not immediately known what caused the fire, which leveled the building at 1132 E. Pierce St. that had housed the beloved Mexican restaurant owned since 1979 by the Magallenez family, who also have restaurants in Gonzales and Lockhart.
That family was still reeling from the passing of their patriarch, the restaurant’s founder — the original “Mr. Taco,” Bonifacio Magallanez Jr. — at the age of 78 on May 25. Now, what should have been a happy time with the restaurant running specials to celebrate teachers and the start of the school year has turned into another heartbreak.
“Mr. Taco would like to thank every single person that has reached out to us after we suffered another unimaginable loss today in the form of a fire that ran throughout the entire restaurant,” the family said in a statement on the restaurant’s Facebook page.
“While the damage to the location can be seen across social media, the images fail to compare to the pain we feel as a restaurant family. During this time of unexpected tragedy, please keep our owners, managers, wonderful staff and customers in your thoughts and prayers as this was a means of livelihood for so many and a staple in the Luling community since 1979.”
The restaurant owners extended their appreciation to the first responders who came to fight the fire, noting their “diligence to protect our community cannot be more appreciated.
“We are deeply thankful for the outpouring of support and concern for our restaurant and would continue to ask for prayers for healing for our entire Mr. Taco family,” the statement continued. “We love you, we are thankful for you and we look forward to serving you again in the future.”
Support for the restaurant could be seen all over social media Tuesday and Wednesday as the Luling Area Chamber of Commerce, Luling Main Street and even other restaurants like Rails & Ales Taphouse and businesses like Easterling Exteriors voiced their love and prayers for the Magallenez family and their employees.

Jason Landry was last seen in December 2020 while driving home from his college apartment in San Marcos to Missouri City. Three years later, his family is hoping for a miracle on his whereabouts.
LULING, Texas (KTRK) -- The family of Jason Landry hopes this December someone finally gives them the clues and answers they've been longing for to find their son.
It's been three years since the Texas State University student disappeared while he was driving home to Missouri City to be with family for the holidays.
Jason Landry was 21 years old when his car was found crashed in a rural roadway outside Luling with his wallet and phone inside.
The family is holding on to hope and told ABC13 they have another scheduled search this Saturday. Jason's father, Kent Landry, says he just wants answers.
"I can tell you, as a dad, I would give anything... anything to put my arms around my son," Kent said.
Kent and his family have spent the past three years praying and longing for clues that will lead them to Jason.
"I don't know what happened. I don't know if it's going to be his bones laying out there in a field or someone got involved and were looking in the wrong place. If someone can point us in the right direction," Kent said.
Through the years, law enforcement have told ABC13 that they found his wrecked car outside Luling along with his phone and wallet.
His clothes were also found several hundred feet away, but there was no sign of Jason.

"Pray that one of these searches or someone will open their hearts to make that phone call to give us an answer to what happened," Kent said.
The Texas Attorney General's Office cold case unit has been on this case for nearly two years now.
"The OAG's Cold Case and Missing Persons Unit has dedicated hundreds of hours of investigative resources to the case. This includes conducting extensive forensic testing, issuing numerous search warrants, interviewing dozens of witnesses, and enlisting the assistance of experts with a wide range of specialized backgrounds from multiple government agencies and non-profit organizations."
This November, the case into Jason's disappearance was reviewed again during a round table case review. The Texas Attorney General's Office say they thoroughly examined all parts of the case and concluded that all credible leads and investigative steps have been thoroughly pursued up to this point.
Kent says there's a $20,000 reward out for information on his son's case.
"We love nothing better than to have Jason home safe and found in our midst. I could come back, tell you the story of what happened, but the fact of the matter is to be realistic after the expectation is that he's in heaven," Kent said.
They're hoping for a miracle but say the best Christmas present for their family is for someone to finally speak up and give them answers on where he is.

Amid a wave of economic development announcements in Luling — including promises for hundreds of new jobs spread across a defense contractor, a nutraceuticals company and the largest location of Buc-ee's Ltd. — officials in the small city on the southern fringe of the Austin metro said it was only a matter of time before the Central Texas boom found them.
That's because the city of roughly 5,500 is in a spot primed for development. It's in the fast-growing region between Austin and San Antonio. It's in a transportation corridor that's adjacent to interstates and direct routes to airports and shipping ports. Plus it's got the land, partnerships with surrounding economic development groups and a pro-growth mindset among public officials.
"We've been preaching for a long time that the population was coming this way," said Trey Bailey, executive director of the Luling Economic Development Corp. "We knew with our location it was just a matter of time."
What's happening in Luling — located about 50 miles south of Austin, mostly in Caldwell County — is emblematic of the wider economic boom across Central Texas, as well as the challenges associated with it.
Among the companies growing in Luling are X-Bow Systems Inc., a New Mexico-based builder of rocket motors that is building a manufacturing facility at the former home of the Carter Memorial Airport, and dietary supplement maker Veritacor Manufacturing LLC, which expanded to more than 50,000 square feet at a 15-acre campus that includes space for manufacturing, warehouse, finished goods and fulfillment.
While the city was ready for the growth, Bailey said perhaps the biggest challenges are infrastructure and planning.
"Sometimes growth happens too quick and it's tough on small municipalities to keep up with that type of planning and that type of investment that's needed for infrastructure upgrades and the expense of that," Bailey said.
City leaders aim to fill that gap with grants, like a recently announced $1 million from the U.S. Department of Commerce for the city's industrial park. It will help pay for road, water and broadband internet improvements to support the X-Bow expansion and the new location and potential expansion of Hometown Meat Market LLC, a meat processing facility and retailer. The investment will be matched with $666,667 in local funds, and will create and retain nearly 400 jobs, and generate $25.5 million in private investment, according to estimates.
"The Biden-Harris Administration's Investing in America agenda is jumpstarting our infrastructure and domestic manufacturing, creating hundreds of thousands of jobs across Texas and the entire country," Secretary of Commerce Gina Raimondo said in a statement.
The grant from the Department of Commerce's Economic Development Administration "will help create new, high-paying jobs in the community and grow economic opportunity across the region," according to Raimondo.
The federal support was welcomed by local and state leaders.
"This grant to help support growth in aerospace manufacturing and other important industries will bring hundreds of good-paying jobs to Texans and the city of Luling," Gov. Greg Abbott said in a statement. "I thank the Economic Development Administration for this investment in Central Texas that will help strengthen our state’s position as a national aerospace manufacturing leader.”
The grant "will allow the City of Luling to complete the needed infrastructure at our business and industrial park, opening the door for continued investment and job creation in our area,” Luling Mayor CJ Watts said in a statement. “This is the type of project that brings municipal, state and federal resources together to create jobs and commercial investment and enables us to compete in the growing Central Texas economy. "
Bailey said the grant will allow the Luling EDC to finish out what he called a 48-acre "blooming industrial and business park." Hometown Meat Market has already surpassed 24 jobs and is growing. Cal-Maine Foods Inc. (Nasdaq: CALM), an egg producer, is located across the street. The EDC has three lots left, although one could potentially be used for Hometown Meat Market expansion and an unnamed manufacturer is looking at another, and interest is high.
"We're just about sold out in the business park," Bailey said.
The growth in Luling has spawned new challenges. While the city has seen a spike in real estate development, it doesn't yet have the rooftops yet to support the new jobs. Housing values are rising rapidly. Plus, geographic growth is limited by surrounding oil fields.
"We'll reach a point where we're saturated down here," Bailey said. "We're limited on the land we have for development."
That means the need for continued smart growth — and outside help when needed. Bailey said the goal was always to continue to develop along I-10, which is well underway. Next, city leaders would like to add more warehousing.
"Hopefully, we'll have more announcements here in the future," he said.

On the third year anniversary of Jason Landry's disappearance, a crowd gathered on a gravel road in Luling.
LULING, Texas - Lisa Landry has counted the days, all 1,097 of them, since her son, Jason Landry, was last seen alive.
"Here it's almost Christmas again and another Christmas without Jason, and we just miss him so much," said Landry. "We have reached three years. Never thought we'd be here."
On the anniversary of his disappearance, a crowd gathered on a gravel road in Luling.
It's the same place investigators found his wrecked vehicle with his phone and some clothes scattered nearby.
Jason Landry: Three years since disappearance
Dec. 13, 2023, marked three years since the disappearance of Jason Landry, a 21-year-old Texas State student.
"Looking for a missing person, especially in a terrain such as this, that's no easy feat," said Jason Watts, a private investigator and group leader for the Jason Landry Volunteer Search Team.
Watts said Landry is likely within a mile and a half of the crash site, and the search team isn't giving up efforts.
"In cases such as this, it's always important to keep searching for the individual," said Watts.
Even in the pouring rain on Wednesday, people still showed to the outdoor vigil.
Jason Landry has been missing for three years
Three years ago, a Texas State student left San Marcos to head home for the holidays and was never seen again. The search for Jason Landry continues with a gathering later this week near Luling.
"We've made a lot of new friends from the people that care about what's going on with our family, and that really is important to us and means so much," said Landry.
Each person at the vigil lit a candle as a reminder that light can still be found in the darkness.
"Every time somebody searches we hope there will be some answers, something to get it started," said Landry. "Every day we think that. We also know that it's all in God's timing, and we have to rely on that and get our comfort from knowing that God is in control and that he has Jason, wherever Jason is."
A search group is planning on going out again on Saturday.
The Attorney General's office also shared that its Cold Case and Missing Persons Unit have thoroughly pursued all credible leads, but it will keep Jason's case active.
