The American chain is best known for its bagels, sandwiches, coffees and other baked goods. The business will be located in the new mixed-use development spearheaded by Pearl River Companies—Sendero.
Carter’s will soon open a store in the former Rue21 space at Burleson Crossing. The brand specializes in clothing for babies and toddlers, while its subsidiary, OshKosh B’gosh, is known for children’s denim and overalls up to size 14.
Set to open in the upcoming Burleson Crossing East shopping center, the American pet retail chain sells food, supplies and accessories. It also offers services such as grooming and training, with many locations providing veterinary care and boarding.
In The News
Christina and Adam Want took over Bastrop Cafe in February, with plans to perk up the menu in the future. Nestled inside the Bastrop Fitness Project, the cafe serves coffee made with beans sourced from Bastrop’s Texas Coffee Works. The menu also includes teas, refreshers, milkshakes, smoothies, healthy snacks and more.
The Austin-based burger stand is celebrating its 20th anniversary this year. The restaurant is open for breakfast, lunch, dinner and late-night dining. P. Terry's offers burgers and fries produced with all-natural ingredients. The eatery opened its only Bastrop location in October 2023.
The restaurant celebrated its 50th anniversary in March. The menu features American and Tex-Mex cuisine, including burgers, chicken, fajitas, pasta and seafood, according to its website.
Closings
Jaime Astorga opened his coffee shop inside Community Gardens in the summer of 2024. Astrogra said he has future plans to open a new Bastrop Mr. Brew with more options, including a drive-thru. The cafe offers coffees, teas, aguas frescas, smoothies and snacks.

In April, Pearl River Companies will be breaking ground on the next phase of a 75-acre mixed-use development—Sendero. Once completed, the development will feature new hotel, retail, dining, housing, and health and wellness options.
The first phase of Alta Trails multifamily apartments has been completed on the property, kicking off a project that is slated to be completed by 2030.
“We knew big businesses and population were coming, but having family living in the area still, I realized there’s a lack of resources. ... [This seemed like a] unique opportunity for an exciting mixed-use environment where people can come work, play, relax, even live in the Alta apartments,” said Mason Mote, a Bastrop native and co-founder and managing principal at Pearl River Companies.
The framework
Pearl River representatives said the planning around the development has been very intentional to fill gaps they identified in the community.
Sendero’s dining options will include a Chuy’s, Jersey Mike’s, Einstein Bros. Bagels and a Texas Roadhouse—which is slated to open in the spring of 2026, according to a spokesperson from the restaurant.
The development will bring a total of 782 units of multifamily apartments to Bastrop—half of which have already been constructed in Phase 1 of Alta Trails Apartments. Mote said incorporating housing was a priority due to the lack of options available.
Bastrop City Manager Sylvia Carrillo-Trevino said she hopes the additional housing supply can help stabilize rent prices.
“Supply right now is smaller than demand, and that’s what’s making rents increase,” Carrillo-Trevino said.
Also incorporated into the Sendero development will be 90,000 square feet of businesses centered around health and wellness. Spencer Harkness, co-founder and managing principal at Pearl River Companies, said they are looking to incorporate options for all ages, from fitness to pediatric care, dental, physical therapy and pharmacy services.
Mote said he saw the need for expanded medical services in Bastrop firsthand after his mother experienced a stroke and had to drive to Austin to receive medical care.
“I have personal experience that it’s difficult to find the help, or if you find it, it’s difficult to actually get in on a regular basis because it’s almost zero-sum,” Mote said. “There’s too much of a need and too little offered.”
Currently, Pearl River Companies is predeveloping the first phase of health and wellness, which is a 43,000-square-foot, two-story building, Harkness said.

Located at the intersection of Hwy. 71 and FM 969, the development is positioned on a growing transportation and development corridor in Bastrop.
Carrillo-Trevino said there will be a designated turn lane into Sendero on the Hwy. 71 frontage road, and interior roads within the development—one of which will cut through FM 969 and connect drivers to Blakey Lane or Hwy. 71.
The Sendero development has been years in the making, with Pearl River Companies closing on the property in December 2021 before starting on a master plan for the venture.
Although some of the tenants in the development have been identified, there are still more spaces to fill as construction continues. Harkness said their goal is to find the right balance of tenancy, and work in national, regional and local businesses.
“We’re excited to deliver this thing so that people can start to understand what we’ve been talking about, and start to interact with it in a tactile way,” Harkness said.

BASTROP, Texas — Tom Leibowitz and Jodie Smith are a husband and wife team who run an organization called Homes for Good. It expands affordable housing options for lower income households.
"What we're seeing here in Bastrop is a need for increased housing supply because there hasn't been a lot built," Leibowitz said.
Leibowitz and Smith bought property to use for a development project they call North End Prairie. The development is for families who earn up to 80% of the area's median income.
"In the Bastrop area, that's part of the Austin regional area for median income and for a family of four, 80% median income is around $97,000, $98,000," Smith said.
The development would be located between Pecan and Hill streets, just south of Linden Street in Bastrop. It would have between 45 and 50 homes and would feature a mixture of single family homes and duplexes.
But not all Bastrop residents support the idea.
Heather Greene lives next to where the development would be located. While she recognizes the need for affordable housing, she has concerns when it comes to parking, traffic and flooding risks.
"I've lived here for my entire life, and I know that there are lots of places [where] we could do that," Greene said. "I just don't feel like doing it in a neighborhood that's already very developed."
While Leibowitz and Smith plan to address the community's concerns, Greene wants more people to listen.
"The benefits that will come to all those hardworking families that are going to be able to live here will far outweigh any minor inconvenience that people may face," Leibowitz said.
"Just because we've been there for a long time, [that] doesn't mean that we should be looked over," Greene said.
It is attempt at finding answers to affordability issues while facing the hard questions.
Leibowitz and Smith told KVUE they are still waiting to get regulatory approval from the city to put in streets and utilities.
There will be a town hall meeting on March 31 at the Bastrop Convention Center at 6 p.m. to discuss the development.
